Birthday Dinner - Chile Relleno Casserole
Inga's birthday was Monday and rather than going out, she asked that I make dinner. Knowing she has an unnatural love for casseroles, I tried this new recipe for Chile Relleno Casserole. To keep it veggie friendly, I stuffed the peppers with a black bean/chihuahua cheese mix. It was good, but the batter was a touch to 'eggy'. I'll have to play with that part of the recipe a bit.
BTW - Food photos are harder than I thought! These are the first ones that came out halfway decent.
